seta r_useThreadedRenderer "x" .... x - number of cpu cores to use
I have mine set to 4 but I haven't looked to see if my cpu usage actually looks any different between 1 or 4 cores being used.

Probably best to be a little careful with these tools, at least to start with. Lots of the cvars are apparently locked or are server-side only.
